Description

If you live in the Southeast you have probably heard of Sticky Fingers. We vacationed in Myrtle Beach several years ago and they served the most delicious corn muffins. They are almost like a dessert. I’ve come up with my own version of these. Hope you’ll try them.

Ingredients

  • 1 cup Your Favorite Butter Yellow Cake Mix
  • 1 cup Jiffy Corn Meal Mix
  • 1 whole Egg
  • ⅓ cups Milk

Preparation

Mix the ingredients and, with your 1/3 cup measure, scoop muffin mix into a greased muffin pan. This recipe make 6 muffins so I use my 6-muffin pan. Bake at 375°F for 15 to 20 minutes. Enjoy! Don’t forget to smother them with butter! This recipe can be easily double or tripled.

Yum, yum, yum!! Made these this morning and they are so tasty. I made my own corn meal mix and used white whole wheat flour instead of regular. The flavor is amazing- sweet and slightly corn flavored, but rich from the cake mix. My two youngest kids are happily devouring their muffins as I type. Thanks for the easy and tasty recipe!
