Throw these in the oven for a couple hours and forget about them. They’ll come out a beautiful dark red and so, so sweet.
1. Preheat oven to 270°F.
2. Slice the tomatoes lengthwise and place them on a parchment paper-covered cookie sheet, seed-side up.
3. Sprinkle the tomatoes with a couple pinches of salt and some fresh cracked black pepper and then drizzle them lightly with olive oil.
4. On a middle shelf in the oven, bake the tomatoes for 4 hours.
Enjoy them by themselves or on some nice toasted artisan bread with mozzarella!
