Description

A crumbly, healthy, yet rich banana bread that is full of spice!

Ingredients

  • FOR THE BREAD:
  • 1-⅔ cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Ground Nutmeg
  • ½ teaspoons Ground Cardamom
  • ¼ teaspoons Ground Allspice
  • ¼ teaspoons Ground Cloves
  • ½ teaspoons Salt
  • ½ cups Granulated Sugar
  • ½ cups Light Brown Sugar
  • 2 whole Eggs
  • ⅔ cups Canola Oil
  • ½ cups Creamy Peanut Butter
  • 4 whole Large Very Ripe Bananas, Mashed
  • 2 Tablespoons Vanilla Yogurt
  • 1 teaspoon Vanilla Extract
  • FOR THE TOPPING:
  • ⅓ cups Light Brown Sugar
  • 3 Tablespoons Whole Wheat Flour
  • ½ cups Old Fashioned Oats
  • 3 Tablespoons Unsalted Butter, melted

Preparation

1. Set oven to 350ºF. Grease and flour two loaf pans and set aside.
2. In a medium bowl, sift together the flour, baking soda, cinnamon, spices, and salt.
3. In a large bowl, beat sugars and eggs with a whisk until light and fluffy, about 10 minutes. Gently pour in oil and mix until well combined.
4. In a small bowl, mix together peanut butter, mashed bananas, yogurt, and vanilla and stir well to incorporate. Add to the sugar and egg mixture.
5. Fold in the dry ingredients, stirring in swift strokes ensuring not to overmix. Pour batter evenly among two pans.
6. For the topping, in a small bowl, mix the brown sugar, flour, and oats. Slowly pour in the melted butter and stir until mixture has the consistency of wet sand. Sprinkle evenly over the loaves.
7. Bake at 350ºF for about 1 hour, until a toothpick inserted in the middle comes out clean.

Wow. Fabulous! I usually accept that using whole wheat flour compromises the texture in breads like this but not in this case! The bread was moist and spongey. Also, I didn’t mix my peanut butter in that well and am discovering little pockets of gooey peanut butter throughout the bread. So delicious! Thanks for the recipe!
