These sweet bars are a great treat and easy to make. Just remember not to count the calories!
Mix the butter, oatmeal, brown sugar, and flour together until the mixture is crumbly. Press 1/2 to 3/4 of the mixture into the bottom of a 9×13 greased pan. Mix cream cheese, sugar, and vanilla with an electric mixer until creamy. Stir in the diced rhubarb and spread over the crust. Top with remaining crust mix.
Bake at 350ºF for 40-45 minutes.
I like to keep them in the refrigerator after they have completely cooled.
This recipe halves well. I halve everything and use a 9×9 pan and it turns out just as good!
