A quick and healthy and inexpensive wrap when you don’t want to break the bank with real crab.
In a large bowl, combine chopped crab meat, celery, bell pepper and onion. In a small bowl, whisk together olive oil mayo, rice vinegar, pepper, salt, garlic, cilantro and lime juice. Pour over the crab mixture. Cover and let sit in the fridge until chilled, or up to 2 hours.
When chilled, top each of the tortillas with lettuce, spooning crab mixture over the top. Wrap and devour.
Quick, simple and a healthy way to get some extra protein and fiber into a busy life.
