A yummy dessert that we sometimes call Easy As Apple Pie: stuffed apples cooked on the coals.
Wash apples, leave skins on, and with a coring tool remove the stem, core and seeds from the apples. Reserve 1/2″ section of the top of the core as a plug. Do NOT go all the way through the bottom of the apple or your filling will fall out. Place each apple on a large square of aluminum foil.
Place the remaining ingredients (except the butter) in a bowl and mix well. Cut butter into 12 equal pieces, put one piece in the bottom of the hole in each apple. On top of the butter put 1 heaping spoonful of filling and top with another piece of butter. When finished filling all the apples, press a plug into the top of each apple hole and wrap each apple tightly in the foil.
Place directly on the campfire coals and allow to cook for 10-15 minutes, rolling from side to side every couple minutes. Remove from the fire with a pair of long-handled tongs. Allow to cool for approximately 5 minutes, then unwrap, remove plugs and serve.
Sometimes the skins get a little too crispy (i.e. black) for most people’s taste. They can easily peel off the skins and discard them after the apples are done baking.
