Just threw these together and they were too good not to share!
Pre-heat oven to 425 degrees Fahrenheit.
In zip-lock bag (or large bowl) combine potatoes, olive oil, garlic, onion powder, salt, pepper, and Parmesan cheese.
Mix well to evenly cover potatoes with the rest of the ingredients.
Place on either a sheet pan or in a roasting pan.
Bake in oven for approximately 30 minutes flipping the potatoes once or twice, until the potatoes are lightly browned on the outside and soft on the inside.

I doubled the recipe because I was cooking for a crowd. They turned out fabulous!! Thanks for the delicious recipe.

These were quite good. I doubled the garlic cloves (should have tripled, but then again I *love* garlic) and added dried parsley, mostly for color.
An important point to note, I think, is the size of the potato cubes. One inch (what the recipe says) is the biggest they should be, and really, I think half or three-quarter inch size cubes would be better. Otherwise you bite into a piece and instead of the lovely Parmesan flavor you get mostly plain potato…which is, well, plain/bland. So small is good (better seasoning to potato ratio).

Fabulous recipe! I added a banana pepper fresh from the garden and served the potatoes with PW’s Firecracker Shrimp.
