Description

Strawberries, blackberries, and blueberries baked into a golden, buttery crust.

Ingredients

  • FOR THE CRUST:
  • 1 cup Quick Oats
  • 2 cups Flour
  • 1-½ cup Sugar
  • ¼ teaspoons Salt
  • 1-½ cup Butter
  • _____
  • FOR THE FILLING:
  • 4 whole Eggs
  • 2 cups Sugar
  • 1 cup Sour Cream
  • ¾ cups Flour
  • 1 pinch Salt
  • 1 pinch Lemon Zest
  • 1 teaspoon Vanilla Extract
  • 2 bags Frozen Mixed Berries, Such As Strawberries, Blackberries, And Blueberries (16 Ounce Bags)

Preparation

To make the crust/topping, preheat the oven to 350 degrees F. Grease a 9×13 baking pan.

Put oats into the food processor and pulse until a coarse “flour” forms. Add the regular flour, sugar, and salt to the food processor. Pulse a few times to mix. Cut the butter into 1/2-inch cubes, and add to the flour mixture. Process until the butter is evenly distributed but the mixture is still crumbly, 30-60 seconds. (I had to do this in 3 batches because of the size of my food processor.)

Reserve and set aside 1 1/2 cups of this mixture to use as the topping. Press the remaining mixture into the bottom of the pan, and bake 12-15 minutes. Cool for at least 10 minutes.

To make the filling, whisk the eggs in a large bowl, then add the sugar, sour cream, flour, salt, lemon zest, and vanilla extract. Gently fold in the berries and spoon the mixture over the crust. Sprinkle the reserved topping mixture evenly over the filling, and bake 45 to 55 minutes.

Cool at least 1 hour before cutting into bars. Serve bars warmed, chilled, or at room temperature! Either way, I’d recommend them with a scoop of ice cream!

I cannot WAIT to try these, will be making them this weekend. My hubby is nuts for anything oatmeal or berries, this will thrill him!

Looks delicious. I’m guessing fresh berries can also be used in this recipe. It’s almost berry season here. Thanks for sharing.

I think this would be amazing IF the center actually set. I baked them for 65 minutes, and the center was still a gooey mess. I had hoped to send these to my dad for Father’s Day, but I ended up scooping out the center into a tupperware, and we ate around the edges. Any hints on how to solidify the center?

SUPER GOOD!!!! I did make my own mixture of fruit. I used fresh rhubarb, frozen strawberries and frozen raspberries! All my family loved them except the one that doesn’t eat rhubarb!
