Description

Our neighbor has a peach orchard and he shares his peaches with us. I thought I would return the favor by making him a pie from his own peaches. He expects a pie when we pick peaches now! You can cut up and freeze your peaches ahead of time or use canned or store bought frozen peaches. If using canned peaches, drain the juice.

Ingredients

  • 4 cups Peaches, Peeled And Sliced
  • ¾ cups Sugar Plus Extra For Sprinkling On Top Of The Pie
  • ¼ cups Minute Tapioca
  • 1 Tablespoon Lemon Juice
  • ¼ teaspoons Cinnamon (optional)
  • 1 package Pillsbury Refrigerated Pie Crusts (2 Crusts Per Package)
  • 1 Tablespoon Butter
  • 1 whole Egg White

Preparation

Preheat oven to 400 degrees F. Spray a pie dish with non-stick cooking spray.

Toss the following into a medium-sized bowl and let stand 15 minutes: peaches, sugar, tapioca, lemon juice and cinnamon.

Place a pie crust in the bottom of the pie dish, add fruit mixture and top with small bits of butter evenly placed on top of the filling. Top with second pie crust. Seal and flute edges of the crust. Brush the top crust with egg white evenly and cut slits in the top crust to allow steam to escape. Sprinkle the top crust lightly with sugar if desired and bake 50 minutes or until juices form bubbles that burst slowly. Cool and serve with ice cream.
