I’ve taken my Pig Candy recipe to a whole ‘nother level. It’s the same sweet, salty, smoky and slightly spicy base recipe, with the added flavor of caramel and crunchy pecans.
Preheat your oven to 375ºF.
Mix the syrup and cayenne pepper well in a small bowl and set aside.
Coat both sides of each bacon slice generously with brown sugar.
Arrange the bacon on a wire rack inside a sheet pan.
Bake in the center rack in your oven until the sugar is starting to caramelize and the bacon just starts to crisp around the edges. This should take about 15 minutes, depending on the thickness of your bacon.
Remove from the oven and brush each slice with the syrup mixture and bake another five minutes.
Flip the bacon over and brush the other side with the syrup.
Dust the top of each slice with pecans and sprinkle with a little of the caramel.
Bake three minutes more.
Lightly and carefully brush the pecans with syrup.
Bake three minutes more.
Remove from the oven, flip each slice over and dust the other side with the remaining pecans.
Let sit five minutes.
Enjoy, then immediately start making more.

I’m SOOO EXCITED to make this! I’ll have to practice and make sure I get the recipe down pat before I give them away as Father’s Day gifts.

Why does this remind me of the line from an old Motown tune: Um, he’s good-bad, but he’s not evil – although this recipe sure is!
