A twist on a classic, just in time for spring!
Preheat oven to 350ºF. Grease an 8×8″ pan thoroughly.
In the bowl of an electric mixer, beat together butter and powdered sugar on medium speed until light and fluffy.
In another bowl, whisk together flour and salt.
Turn the mixer down to low and slowly add the flour and salt to the butter mixture. Mix until well combined.
Press the dough into the prepared pan and bake for 10 minutes.
While the dough is baking, prepare the filling by simply mixing all of the ingredients together until well-combined.
Bake for 20 minutes, or until the edges of the filling are slightly golden brown.

ahh……eggs! that makes perfect sense! thanks for pointing that out wyomingcook! I’m sure that will make for a better setting filling, as that’s why I overbaked…couldn’t get the filling to set.

Hi, this looks fabulous. I think you forgot to list the eggs in the filling in this recipe, as I am comparing it to your blog. Also, one other question – do you just use the zest from one orange?

Just made these! As it was my first time ever making something like this, I overbaked it. They look ugly as sin, but they are still SO delicious! I’m taking them to work, I”m positive the ladies will overlook the ugliness and enjoy the wonderful, summery taste! Thanks for posting!
