This dip is fantastic! My family and friends love it! It is light and refreshing, lemony, garlic and creamy!
Puree the beans, garlic, lemon juice, olive oil and parsley in a food processor until combined. Season with the salt and pepper, to taste. Pulse 4 or 5 times to incorporate.
Transfer to a bowl and serve with pita chips!
Refrigerate any unused portion. Will stay good 4 to 5 days.
I usually double the recipe because it is so good!
