Great treat for St. Patricks Day.
1. Preheat oven to 350ºF. Grease/spray a 9×13 inch baking pan.
2. First prepare the crust. In the bowl of a food processor, mix the flour, butter, sugar, salt and vanilla until fully combined and crumbly.
3. Press firmly into the bottom of pan and bake for 15 minutes.
4. Meanwhile get the filling/top started. In a medium bowl, whisk eggs, sugar, flour, lime juice and vanilla until fully combined.
5. Add food coloring if desired.
6. When crust is done, remove and pour filling/top on the hot crust.
7. Bake for 20 more minutes. Remove and let cool completely.
8. Cut into squares and stick in the fridge for about 1–2 hours. Serve and enjoy.

Nice St. Patty’s variation on Margarita bars : > My pop used to tint everything green for holidays from green mashed potatoes to blue pancakes. These would be good with a green beer!
