This is a recipe my mom made over 30 years ago. It was a family favorite! The tartness of the cherries mixed with the sweetness of graham crackers makes this dessert delicious! The meringue helps to keep it light. Blueberries can be used instead of cherries.
Mix together the crushed sleeves of graham crackers, sugar and cinnamon. Add melted butter. Press 3/4 of mixture on the bottom and slightly up the sides of a 9×13 pan.
Pour cherry pie filling over the graham cracker mixture. Blueberries can be used instead of cherries.
For the meringue, beat egg whites until frothy. Slowly add the sugar. Beat until stiff. Put on top of the cherries. Sprinkle the rest of the graham cracker mixture over the meringue.
Bake at 275ºF for 35 minutes.
