My family loves this recipe. I make it for them often, always doubling the recipe.
1. Preheat oven to 350ºF. Lightly grease a 9×5 inch loaf pan.
2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Stir in the eggs one at a time, beating well, then stir in the banana and vanilla.
3. In a separate bowl, sift together flour, baking soda and salt. Beat into the creamed mixture. Stir in oats and nuts. Pour into the prepared pan.
4. Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
