I found this recipe several years ago when trying to find something to bring to Spanish Club in high school. Tweaked it several times and now I make it as a side dish nearly every time we do Mexican or Southwest for dinner.
In saucepan, saute onions with oil until golden. Add rice to the pan, mix evenly. Mix in remaining ingredients. Cover, bring to boil.
Reduce heat and simmer 30-40 minutes, until rice is tender.
