Description

My mother made these for me and my siblings when we were growing up, and I’ve continued baking them for my own kids for 21 years! Just the right combination of chocolate and banana make them a hit with everyone. My middle school students beg me to bake them for class events. My first contribution to the TK—I hope someone enjoys this recipe.

Ingredients

  • 1-⅓ cup Firmly Packed Brown Sugar
  • 1-⅓ cup White Sugar
  • 1-⅓ cup Shortening
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 2-½ cups Mashed Bananas
  • 4 cups Unbleached Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 cups Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 350ºF.
Line the bottom of a 17″ x 12″ roll pan with parchment.

1. Mix sugars together. Add shortening and mix well.
2. Beat in eggs and vanilla.
3. Stir in mashed bananas to the mixture.
4. Combine dry ingredients using a sifter.
5. Add dry ingredients to the wet mixture 1/2 cup at a time.
6. Stir in chocolate chips.
7. Spread batter evenly in the pan. It will come up to the top edges.
8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
9. Bars will be cake-like.

very good! i sub’d butter for shortening, and used a smaller pan – which i regretted – but good flavour, and a nice simple snacking cake for my family. Thanks!
