Description

An ooey gooey fudgy molten lava chocolate cake! Perfect Valentine’s Day dessert!

Ingredients

  • 10 Tablespoons Butter
  • 8 ounces, weight Dark Chocolate (70% Cocoa)
  • ½ cups All-purpose Flour
  • 1-½ cup Icing Sugar
  • 3 whole Egg Yolks
  • 3 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Coffee Powder

Preparation

Preheat the oven to 200 degrees Centigrade. Oil and flour six ramekins. In the microwave, melt the butter and chocolate in 30-second intervals until smooth. Stir in the rest of the ingredients and mix until smooth. Divide the batter evenly amongst the ramekins. Bake in the middle rack of the oven for 10-13 minutes (recipe calls for 10 but mine took 13 minutes). The cakes are done when the edges have set but the middle will still be soft. Run a knife around the edges of the ramekin to loosen the cakes and invert onto your serving plate. You can garnish with a little powdered icing sugar and strawberries on top.

I halved the recipe and got 3 individual cakes.

I just tried this super simple recipe last night for our Valentines dessert and it came out fantastic. (BTW: 200 degrees Centigrade is about 392 degrees farenheit .. in case you forgot to convert .. ahem .. because I surely did not) It was fantastic. I did add a pinch of kosher salt however. Salt adds more depth of flavor (for me, atleast).

Icing sugar is the same as confectioner’s sugar. You can use anything to substitute the ramekins as long as it is ovenproof. You could perhaps use a muffin tray but I’m not sure how you would get them out….perhaps use a liner in the muffin tray?

This was a great excuse to finally purchase ramekins (great colors, great price at World Market). Cooked mine at 425 F and they were perfect! My family all hands said this is a definite keeper!!! It was easy and quick to prepare while my lasagna cooked and then to cook during the latter part of our dinner. Thank you!
