Description

Old-fashioned oats sweetened with brown sugar and sour cream.

Ingredients

  • 1 cup Rolled Oats
  • 1 cup Sour Cream
  • ⅓ cups Butter, Melted
  • 2 whole Eggs
  • 1 cup Brown Sugar, Firmly Packed
  • 1 cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt

Preparation

Preheat oven to 375°F.

Line a muffin pan with cupcake papers.

Combine oats, sour cream, butter, eggs and sugar. Add dry ingredients. Do not overmix.

Fill muffin cups 2/3 full.

Bake for 20 – 25 minutes.

Serve warm with butter.

These are great! However, I must make recipes my own so… I double the recipe and I add:

1 tbsp cinnamon
1/2 cup chopped pecans
1/2 cup orange flavored craisins
1 tbsp. Orange extract

Sprinkle tops with large crystalized sugar BEFORE baking.

House smells amazing!!!

Mmmm. I am going to try these! But I will exchange the sour cream for a fruity yogurt! yum!

I thought these were really good. I had all the ingredients too, I did sub for the sour cream 1/2 cup sour cream and 1/2 greek yogurt. I think these would be good with a handful of blueberries too.

I did add 1 teaspoon of baking powder as well because I wanted to make sure the muffins were light and rose up. They turned out great!
