Description

These sweet muffins are basic and easy to make. My mom always made them when we were young and now my husband can’t get enough!

Ingredients

  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ cups Butter (Room Temperature)
  • 1 cup Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • ½ cups Milk
  • 2 cups Blueberries (frozen Or Fresh)
  • 1 Tablespoon Sugar Mixed With 1/4 Teaspoon Nutmeg

Preparation

1. Preheat oven to 375. Grease & flour 12 muffin cups and grease tops of the tins between the cups. Or, use baking cups instead.

2. Mix together flour, powder, and salt in a medium bowl.

3. In a different bowl (or your stand mixer), beat butter a few minutes until fluffy. Beat in sugar until well blended. Beat in the eggs thoroughly; add the vanilla.

4. Stir in the flour mixture about half at a time, alternating with milk, half at a time. Stir in 2 cups of blueberries.

5. Spoon batter into prepared cups, filling them to the top. Sprinkle with the nutmeg sugar.

6. Bake 25-30 minutes until golden. Let muffins cool about 30 minutes in pan before removing.

7. Enjoy!

One word – YUM! These came out perfectly and made the entire house smell fantastic. The muffin itself is delicious. They are soft, flavorful, full of blueberries and the nutmeg sugar gives the topping a wonderful little crunch. Thanks for sharing!!!!

I made these muffins last night with fresh blueberries that were picked last week. What a great recipe! Very easy and very delish! This will be my go-to muffin recipe for blueberries/raspberries from now on – thanks for sharing! (This was the second time I made the muffins; I made them the night before and forgot to put the spice mixture on top – they turned out great as well!)
