Description

So what exactly is the P.H.A.T. Salad? Here is a little hip history on the word “phat” pronounced “fat”.

Phat is (my kids say, was) a slang term used for “pretty hot and tempting”. I decided to use the same term for my pumpkin seed, hemp seed, avocado and tomato salad.

It is such a healthy, quick, easy and did I mention, delicious salad..

Ingredients

  • ¼ cups Freshly Squeezed Lemon Juice (for 1/4 Cup You'll Need 2 Lemons)
  • 1 teaspoon Dijon Mustard
  • 1 Tablespoon Honey
  • 1 teaspoon Sea Salt
  • ¼ teaspoons Freshly Ground Pepper
  • ¼ cups Olive Oil
  • 2  Avocados, Peeled, Pitted And Chopped
  • 2  Tomatoes, Chopped
  • 4 Tablespoons Pumpkin Seeds
  • 2 Tablespoons Hemp Seeds

Preparation

In a bowl, whisk together the lemon juice, Dijon, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly.

Place the avocado, tomato, pumpkin seeds and hemp seeds in a large bowl. Drizzle with vinaigrette and toss lightly. Taste for seasonings and serve immediately.
