Description

Not your typical sweet potato casserole; this could almost be a dessert!

Ingredients

  • 4 whole Sweet Potatoes
  • 1 cup Sugar
  • 2 whole Eggs
  • ½ teaspoons Salt
  • ½ sticks Butter
  • 1 teaspoon Vanilla
  • 1-½ teaspoon Cinnamon
  • 1 cup Brown Sugar, Packed
  • ½ cups Flour
  • 1 cup Pecan Chips
  • ½ sticks Butter, Melted

Preparation

Peel sweet potatoes and cut them into small pieces and boil them until soft. Drain.

I put my softened pieces into my Kitchenaid stand mixer to mash them up or you can mash them by hand.

Then add the sugar, eggs, salt, butter, vanilla and cinnamon to the mashed sweet potatoes. Stir until well mixed.

Grease a 9 x 13 baking dish and pour sweet potatoes into the pan, spreading evenly.

In a mixing bowl, combine brown sugar and flour and mix with a fork to get rid of as many lumps/clumps as you can.

Add chopped pecans and mix until well blended.

Pour melted butter into the nut mixture until all ingredients are coated with butter.

Place topping mixture over mashed sweet potatoes until thoroughly covered.

Bake at 350 degrees until the topping is nice and brown (my oven takes about 25-30 minutes).

I made this the other night for my husband and I, halving the recipe because he claims he hates sweet potatoes. Well I wish I hadn’t! This was so delicious! Even my husband took seconds. I ate the little that was left the next day for lunch and even warmed up it was amazing.
