Description

A delicious twist on fresh picked green beans that is a burst of summer goodness in your mouth. It’s an excellent side!

Ingredients

  • 6 cups Fresh Picked And Snapped Green Beans
  • 2 cloves Garlic, Minced Or Pressed
  • 6 leaves Fresh Basil, Roughly Chopped
  • 2 Tablespoons Good Quality Extra Virgin Olive Oil
  • 2 whole Sun Warmed Fresh Large Tomatoes From A Garden Roughly Diced
  • 1 teaspoon White Sugar (optional, Just In Case Your Tomato Is Not Homegrown)
  • 1 pinch Salt And Fresh Ground Pepper To Taste

Preparation

In a large pot, bring 1 gallon salted water to a rolling boil. Add green beans and cook until al dente (7 to 10 minutes). Drain green beans and add garlic, basil, olive oil, and tomatoes. (Add the sugar if the tomatoes aren’t sweet enough.) Salt and pepper to taste. Add grated parmesan if desired.

Excellent cold or at room temperature. (Frozen beans and canned tomatoes work in a pinch.)
