My take on the classic side dish of corn, lima beans and tomatoes flavored with bacon and onion.
In a skillet with a tight-fitting lid, fry bacon until crisp.
Remove bacon and set aside.
Reduce heat and add garlic and onion to bacon drippings in pan. Cook and stir until onion becomes soft.
Crumble bacon and add to skillet with salt, pepper, corn, lima beans and tomatoes. Stir to combine.
Cover and simmer about 20 minutes, or until vegetables are cooked through.
