Sigeumchi Namul (시금치나물) is a common Korean side dish (banchan) made from spinach seasoned with garlic, soy sauce, and toasted sesame oil.

Bring a pot of water to a boil. Add the spinach and cook for 1 minute. Drain through a fine-mesh sieve. Run cold water over the spinach to cool it down. Squeeze out any excess water.
Put the spinach in a bowl and separate it out with your fingers. Add the green onion, garlic, soy sauce, and toasted sesame oil. Taste and add salt if needed. Sprinkle the sesame seeds on top just before serving.
Store any leftovers in the refrigerator for up to a week.
