Description

Great creamy spinach casserole—with a bite! It’s a family favorite at Thanksgiving and Christmas.

From the kitchen of an old friend: Roberta Darnielle of Houston.

Ingredients

  • 2 packages (about 10 Oz. Each) Frozen Spinach
  • 4 Tablespoons Butter
  • 2 Tablespoons Flour
  • 2 Tablespoons Chopped Onion
  • ½ cups Evaporated Milk
  • ½ cups Spinach Liquor
  • 1 teaspoon Worcestershire Sauce
  • ½ teaspoons Pepper
  • ¾ teaspoons Celery Salt
  • ¾ teaspoons Garlic Salt (or Powder)
  • ½ teaspoons Salt
  • 6 ounces, weight Jalapeno Cheese
  • Red Pepper To Taste

Preparation

Cook spinach. Drain and reserve liquid (spinach liquor).

Melt butter in a saucepan over low heat and add flour, stirring until blended and smooth but not brown. Add the onion and cook until soft but not brown.

Add liquids slowly, stirring constantly to avoid lumps.
Add seasonings and cheese. Stir until melted and combine with spinach.

This may be served immediately or placed in a casserole, topped with buttered crumbs (Ritz crackers are great!) and refrigerated overnight or a few hours. Before serving, reheat in a 350°F oven until hot.
