Description

This is a really great tasting side dish or, add chicken or sausage for a main course. Delicious!

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 1  Onion, Large And Chopped
  • 1 cup Green Bell Pepper, Chopped
  • 1 cup Red Bell Pepper, chopped
  • 3 cloves Garlic, Chopped
  • 1 Tablespoon Ground Cumin
  • 1  Jalapeno, Seeded And Chopped
  • 1 teaspoon Dried Oregano
  • 2 cans (15-16 Oz. Size) Black Beans
  • 2 cups Crushed Tomatoes With Puree
  • ¼ cups Orange Juice
  • 1-½ teaspoon Hot Pepper Sauce, Frank's Recommended
  • Salt And Pepper, to taste

Preparation

Heat oil in heavy large skillet over medium-high heat. Add onion, bell peppers, garlic, cumin, jalapeno and oregano; sauté until vegetables begin to soften, about 8 minutes.

Mash 1/2 cup beans. Add mashed beans, whole beans, tomatoes, orange juice and hot pepper sauce to skillet. Bring to boil, stirring frequently. Reduce heat, cover and simmer 15 minutes. Uncover and simmer until reduced to thick sauce consistency, stirring occasionally, about 15 minutes. Season with salt and pepper.

Serve over rice, if desired.
