Description

Mashed cauliflower is a great substitute with a 1/4 of the calories as the same serving as potatoes. My kids even loved these. Step-by-step pictures are included in the related blog post.

Ingredients

  • 1-½ head Cauliflower, Medium Sized, Chopped 2" Pieces
  • 3 Tablespoons Butter
  • 3 Tablespoons Greek Yogurt
  • ½ teaspoons Salt
  • 1 teaspoon Pepper
  • ½ cups Green Onions, Sliced Fine
  • 1 cup Cheddar Cheese, Grated

Preparation

Place cauliflower and 1 cup water in a large sauce pan and cover. Heat over high heat until a boil is reached. Lower heat to low and cook for 12-15 minutes until fork tender. Drain cauliflower well. Allow cauliflower to sit for about 4 minutes to release excess moisture.

Add butter, Greek yogurt, salt and pepper. Mash using a potato masher until desired texture is reached.

Stir in green onions and cheddar cheese. Enjoy!

Made this once for Thanksgiving and once for Christmas – it’s excellent! A potato masher definitely helps, but I mashed with an oversize serving fork both times and it just took a bit longer. Mashing in one bowl and then squeezing out as much excess water with your hands before moving the mash to another bowl helps the consistency.
