Roasted Parmesan Zucchini Spears

Description
A tasty zucchini dish that is very easy and done in the toaster!
Ingredients
- 1 Tablespoon Olive Oil
- 2 teaspoons Dried Thyme
- Salt And Pepper, to taste
- 2 whole Zucchini, Cut Into Spears
- ¼ cups Parmesan Cheese
Preparation
Combine oil, thyme, salt and pepper in a large Ziploc bag. Toss zucchini until evenly covered.
Lay out flat on toaster oven tray and toast on medium to high setting, depending on toaster. Make sure they don’t burn. (I use the medium-high setting for 15-20 minutes.)
Once spears are lightly brown and tender, remove from heat. Sprinkle with parmesan and serve warm.
