Description

Cheesy, veggie, quinoa fritters that act as a wonderful warm side dish, cold snack or buffet finger food.

Ingredients

  • 1 cup Dry Quinoa
  • 3 cups Water
  • 2 whole Small Carrots, Grated
  • 3 whole Spring Onions, Sliced Thinly
  • 1-⅞ ounces, weight Grated Mozzarella
  • 1 ounces, weight Grated Cheddar/double Gloucester/parmesan/etc..
  • 1 Tablespoon Fresh Parsley, Finely Chopped
  • 3 Tablespoons All-purpose Flour
  • Salt And Pepper
  • 2 whole Eggs
  • Vegetable Oil, For Frying

Preparation

In a medium sized saucepan combine the dry quinoa and water. On a medium-high heat bring it to a boil and simmer for approximately 10 minutes. It is done when the white germ separates from the seed. When it reaches this point cover with a lid and take off the heat. Set aside and leave it covered for 5-10 minutes to absorb any remaining liquid.

While quinoa is cooking combine the grated carrot, onions, cheeses, parsley and flour in a large bowl.

Add the cooked quinoa to the bowl and toss through. Season with salt and pepper. Check the seasoning at this point before the eggs are added.

Crack the eggs into the bowl and mix thoroughly.

Heat a little oil in a frying pan over medium heat. Once oil is hot, using a metal spoon, drop a spoonful of the mixture onto the frying pan and flatten gently with the back of the spoon. You can probably fit 4 or 5 spoonfuls into the pan at a time. You will need to cook these in batches of 4 or 5 at one time.

Cook on a medium heat for 3-4 minutes until golden, then flip and cook the other side for 2-3 minutes. Remove cooked fritters from the pan onto a paper towel lined plate and repeat with the remaining batter.
