Description

Mozzarella cheese bread with a twist: pesto. A wonderful pair for spaghetti and meatballs.

Ingredients

  • 1 loaf French Bread
  • ⅓ cups Pesto
  • 4 ounces, weight Fresh Mozzarella

Preparation

Preheat oven to 425° F.

Slice loaf of bread lengthwise and spread pesto on liberally. Thinly slice mozzarella into medallions and lay over top of the pesto. Place bread on a cookie sheet and bake at 425° F for 10 to 15 minutes until cheese just begins to brown. Let rest for 2 minutes. Slice and serve.

I admit that I ate this for dinner-three nights in a row. It was just so good, so simple, and did I mention good? Great recipe for those nights I don’t want to make anything. Thanks!
