Description

In this pea pasta, what really sets off the dish is the sprinkling of chopped smoked almonds. This pasta screams to be the center of attention.

Ingredients

  • 1 pound Small Dried Pasta
  • 10 ounces, weight Fresh Or Frozen Sweet Peas
  • 1 whole Lemon, Zest And Juice
  • 2 Tablespoons Dijon Mustard
  • 5 Tablespoons Olive Oil
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • ¼ cups Chopped Fresh Dill
  • 1 cup Chopped Green Onion
  • 1 cup Chopped Smoked Almonds

Preparation

Cooking the pasta according to the instructions on the package. Two minutes before it’s ready, add the peas to the boiling water.

Once the peas have warmed through, drain the pasta and peas.

Pour the pasta with peas into a large bowl and allow to cool to room temperature.

Meanwhile, whisk the lemon juice, lemon zest, mustard, and oil together in a small bowl. Add the salt and pepper. Pour the dressing over the pasta and mix well.

Add the dill and green onions and toss.

When ready to serve, sprinkle with smoked almonds.
