Description

Artichokes covered in panko bread crumbs and parmesan.

Ingredients

  • 1 can Artichoke Hearts, Drained (14oz)
  • 1 Tablespoon Olive Oil
  • ¼ teaspoons Sea Salt
  • 1 teaspoon Garlic Powder
  • 1 Tablespoon Italian Seasoning
  • ¼ cups Panko Bread Crumbs
  • ¼ cups Parmesan Cheese
  • 1 ounce, weight Freshly Shaved Parmesan, For Topping
  • 1 ounce, weight Mozzarella, For Topping

Preparation

Preheat oven to 350 degrees.

Layer artichokes in a baking dish. Drizzle olive oil on top. Season with salt, garlic and Italian seasoning. Add bread crumbs and 1/4 cup parmesan on top. Bake for 15 minutes.

Remove artichokes from oven and turn on broiler. Top with shaved parmesan and mozzarella and broil for 1-2 minutes, or until cheese is golden brown.

I’m making this today. Just noticed there’s no oven temp listed for the 15 minutes of cooking time. I’m going to go ahead and assume 350*?

Good flavor, but found there were way too many bread crumbs that never really absorbed any oil so it was a bit odd. The toppings didn’t stay on top of the artichokes. I might try this again with another tablespoon of oil after the bread crumb mixture? Hmmmm…
