Description

Never in my wildest dreams would I say the words “love” and “broccoli” in the same sentence. All that has changed. Broccoli and I are now best friends!

Ingredients

  • 1 head Broccoli
  • 6 Tablespoons Olive Oil
  • 1 clove Garlic, Sliced
  • Kosher Salt And Black Pepper To Taste
  • ½ whole Lemon, Juiced
  • ¼ cups Freshly Grated Parmesan Cheese

Preparation

Preheat oven to 425F. This is important when roasting any sort of vegetable. Be sure oven is hot.

Cut broccoli into nice florets. Not too small. Place on a jelly roll pan or sheet cake pan.

Pour olive oil over florets, toss all together so broccoli is covered. Sprinkle with the sliced garlic. Also sprinkle with kosher salt and black pepper.

Roast for 20 to 25 minutes.

Take out and squeeze the lemon juice over all the florets.

Add a sprinkling of freshly grated Parmesan cheese.

You now will have a new best friend!

I do roast the brocolli a little longer (and flip it all with a spatula half way thru baking time) and it turns the flowery tops into crispy little addictions! I have made this so many times since the 9th! And I have to admit that I keep forgetting to add the lemon and parm, but even without it it really is my new best friend!

Thinking of making this as a side dish for Turkey Day. I like to have a simple delish veggie as side so all of our arteries don’t explode. This sounds perfect!

OMGosh! I made this for our Bunco group last nite and it got rave reviews! Most everyone swore they were making it tonite. I directed all the ladies to the PW and TK sites. They’re gonna love it! Thanks for sharing this Sally. I don’t know how to give this a 5 mitt rating, but if I did, I would!

I think this is delicious, and I’m not a big fan of broccoli. I don’t like to measure so I think I used less olive oil. I also left out the garlic and just bottled lemon juice. I love this! Even my veggie-hating daughter said it wasn’t bad, which is quite the compliment from her.

I didn’t have any lemons so I added lemon pepper seasoning. Great flavor- never though broccoli could taste so good!
