Description

Mustard-Lemon Roasted Cauliflower is adapted from my favorite Whole Foods deli counter purchase. This homemade version is just as addicting.

Ingredients

  • 1 head Cauliflower
  • 3 Tablespoons Butter
  • 4 teaspoons Dijon Mustard
  • 1 whole To 2 Whole Lemons, Juiced

Preparation

1. Preheat the oven to 400ºF.

2. Chop the head of cauliflower into florets. Put the cauliflower into a large bowl.

3. In a microwave safe bowl, melt the butter (nuke it between 45 seconds and 1 minute, depending on how fancy your microwave is).

4. Combine the mustard and the lemon juice with the melted butter. Whisk until combined.

5. Pour the butter-mustard-lemon mixture over the cauliflower and stir to combine. You want to make sure that every floret has some of the deliciousness on it.

6. Spread out flat on a baking sheet. Roast in the oven for 40-45 minutes, until caramel-y.

I have to tell you that I’m not a fan of cauliflower but my hubby loves it. I saw this recipe and thought he would like it…. he did and guess what? SO did I! :) This recipe is very easy to prepare, my only caution is that I should have sprayed the pan with cooking spray because a few of my florets stuck to the pan. Thx for sharing!!
