Description

This broccoli pie is so easy to make and so delicious. There is no need to pre-cook the brocoli and the pie forms itself a crust. A perfect meal for brunch or supper. A real hit at potluck suppers; I always come home with an empty pan!

Ingredients

  • 2 bunches (approximately 1 Lb. Per Bunch) Fresh Broccoli
  • ¼ cups Chopped Onion
  • 1 cup Grated Medium Cheddar Cheese
  • ¾ cups Milk
  • 2 whole Eggs
  • ½ cups Bisquick Baking Mix
  • ½ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • ⅛ teaspoons Garlic Powder

Preparation

Wash broccoli and pat dry. Cut broccoli bunches into flowerettes. Lightly grease the bottom of a 9-inch pie plate or 8×8 square baking dish. Spread broccoli over the bottom of the pan, layering if needed. Sprinkle with onion and then with cheese. Measure milk, eggs, biscuit mix, salt, pepper, and garlic powder into a blender. Blend until smooth. Pour over the top of the cheese. Bake in a 375-degree oven for 25-35 minutes. Pie will test done if you insert a knife and it comes out clean. Cut into wedges or squares and serve.

I like to serve this broccoli pie with a green salad and garlic bread.

Optional ingredient: chopped ham (if using ham, sprinkle it on top of the cheese, before adding wet ingredients).
