Description

Baby Yukon gold potatoes roasted with olive oil, lemon juice, and fresh rosemary! This may be the best side dish ever!

Ingredients

  • 2 Tablespoons Fresh Lemon Juice
  • 2 Tablespoons Olive Oil
  • 1-½ pound Baby Yukon Gold Potatoes (or Any Other Small Baby Potatoes Will Do)
  • 1 Tablespoon Fresh Rosemary, Chopped
  • Salt And Pepper

Preparation

Preheat oven to 420 degrees. Whisk the lemon juice and olive oil together. Then add the potatoes to a baking dish and pour the lemon/olive oil mix over the top and toss.

Sprinkle the rosemary over the potatoes and salt and pepper. Then toss well again.

Bake for 25 minutes. Then turn the heat up to broil and cook 5 more minutes or until the potatoes are fork tender.
