Korean-Style Quick Pickles

Description
These Korean-style quick pickles are loaded with awesome flavor. You get sweet, spice, and a flavor like no other from the Korean red pepper paste known as gochujang.
Ingredients
- ½ whole Seedless English Cucumber, Cut Into 1/4 Inch Rounds
- 3 Tablespoons Gochujang
- ½ cups Mirin, Or Rice Wine Vinegar
- 1 clove Garlic, Minced
- ½ teaspoons Sugar
- ½ teaspoons Dark Sesame Oil
- ¼ teaspoons Salt
Preparation
Add everything except sliced cucumber to a small mixing bowl, and stir to incorporate. Add sliced cucumber and gently mix to distribute well.
Cover and refrigerate overnight.
The cucumbers will soften slightly the following day. When you are ready to serve, enjoy them as a side dish to accompany your meal.
