Description

Ditch the canned soup, keep the fried onions.

Ingredients

  • 1 pound Green Beans, Washed And Trimmed
  • 2 Tablespoons Unsalted Butter
  • 8 ounces, weight Mushrooms, Chopped
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 2 cloves Garlic, Minced
  • ⅛ teaspoons Nutmeg
  • 2 Tablespoons All-purpose Flour
  • 1 cup Chicken Broth
  • 1 cup Cream
  • 1 cup French's Fried Onions, Divided

Preparation

Preheat oven to 400ºF.

Bring a large pot of water to a boil and season well with salt. Blanch green beans for 5 minutes and immediately remove to a cold bowl of water to stop the cooking. Drain after a minute or two and set aside.

Meanwhile, melt the butter in a large skillet over medium-high heat. Add mushrooms, salt, pepper and cook until mushrooms begin to sweat.

Add garlic and nutmeg and continue to cook for an additional 2 minutes.

Sprinkle the entire mixture with flour and stir until evenly distributed.

Add the broth and allow to simmer for a minute. Add cream and cook on low until mixture thickens (about 5 minutes).

Remove from the heat and place in a casserole dish. Mix in ½ cup of the fried onions.

Bake for 15 minutes. Remove from oven and garnish the top of the casserole with the additional ½ cup onions.

Bake for an additional 5 minutes until sides are bubbly and onions are golden brown.

Love this green bean casserole! It tastes so much better than the versions that use cream of soups but is just as easy to cook.

I found this easy to make, though the reduction of the sauce took longer than the recipe says, but I also doubled the recipe. The directions should say half of the fried onions rather than half a cup. It makes no sense when the servings are changed. There’s also missing instructions for when to put the green beans in the dish. I just mixed them, the sauce, and half the fried onions together and it worked out fine. Everyone enjoyed it.

Made this to go with our smoked prime rib, baked mashed potatoes and Waldorf salad. AMAZING! I let everything cook longer on the stove top than the recipe called for, and I added more French Fried Onions, but those were my only changes. My mom, who told me before dinner that she did NOT like green bean casserole, but she’d try it came back for seconds. There was none left in the dish after dinner. I’m making it again tonight to go with leftovers. :)
