Description

A quick marinade that tastes fabulous on grilled veggies such as: red peppers, mushrooms, eggplant, squash, as well as chicken and shrimp.

Ingredients

  • ½ cups Extra Virgin Olive Oil
  • 2 cloves Minced Fresh Garlic
  • 1 whole Lemon, Juiced
  • 1 Tablespoon Steak Grilling Seasoning (like The Kind At Costco)
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper To Taste
  • Vegetables

Preparation

Combine ingredients together (except vegetables), adjusting for your personal taste.

Cut up fresh veggies to grill such as red/yellow bell peppers, mushrooms, zucchini, squash, eggplant. Place veggies in a Ziploc bag or bowl, coat well with the marinade.

Marinade for 15 minutes, then place all contents in a grill basket. Grill until roasted ( ~10 minutes depending on items) and serve immediately.

LOVE THIS! My bf is very picky and we had these for dinner and he had nothing but great things to say. He even requested that we eat this more often, getting him to eat veggies is like pulling teeth so this is a must use marinade. :)
