Description

A refreshing way to cook broccoli. This dish pairs well with fish and poultry.

Ingredients

  • 1-½ pound Broccoli Spears
  • ½ cups Water
  • 2 teaspoons Butter
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 2 whole Garlic Cloves, Chopped
  • 1 teaspoon Grated Lemon Rind
  • 2 teaspoons Fresh Lemon Juice

Preparation

Cut up broccoli and combine with water in a large nonstick skillet. Cover and cook over medium-high heat for 6 minutes until crisp-tender. Remove broccoli from pan; wipe pan with a paper towel.

Melt butter in the pan over medium heat. Add salt, pepper, and garlic; cook for 2 minutes, stirring frequently. Add broccoli and toss to coat. Sprinkle broccoli mixture with lemon rind and drizzle with lemon juice.

Love this veggie dish. We keep a can of chopped garlic in the fridge so it is always easy to toss a spoonful in the frying pan with some butter and steam some broccoli. Goes great with fish… if you’re going to buy a whole lemon to give the broccoli some zest, you might as well get some salmon, tilapia or sole and use the lemon on the fish too. I after grating the lemon for the broccoli I slice it in half and then take one of the halves and make thin round slices which I lay on top of the fish when I bake it. The other half of the lemon is for squeezing over everything. Simple, healthy and yummy!
