Description

These are my fireman’s favorite roasted potatoes, slightly spicy and smoky just like my fireman!

Ingredients

  • 5 whole Extra Large Red Potatoes, Cubed
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • ⅛ teaspoons Cumin
  • ⅛ teaspoons Cayenne Pepper
  • ½ teaspoons Smoked Paprika
  • Olive Oil, For Drizzling

Preparation

Preheat the oven 400 degrees. Clean, dry, and cube the potatoes.

Drizzle olive oil to coat the potatoes. Don’t be skimpy, but don’t overdo it. They should be covered but not puddled.

In a small bowl, combine all the spices and mix well. Sprinkle over the potatoes. Mix well.

Bake for 30-35 minutes or until brown. Flip halfway.

Now I regret not making more. Every time I make them, I think I should make a double batch, but I am trying to limit my starches and it is SO hard to not pick at these babies! They are addictive!

These are tasty and pretty spicy! My husband especially liked them. I did need to bake them a few minutes longer than the recipe called for. Also, I didn’t have smoked paprika so I added onion powder instead. (It worked just fine.)
