Description

This is the alternative to my original Easy Italian Potatoes recipe.

Ingredients

  • 2 pounds Baby Red Potatoes
  • 4 Tablespoons Olive Oil
  • 4 Tablespoons Minced Onion
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Rosemary
  • ¼ teaspoons Thyme
  • ¼ teaspoons Sage
  • ½ teaspoons Black Pepper
  • ¼ teaspoons Salt

Preparation

Preheat oven to 400ºF. Wash the potatoes. Cut them into 1-inch cubes. If they are really small, just cut them in half and leave the skins on. Spray a cookie sheet or 9×13 baking dish with cooking spray or line with foil for easy cleanup.

Place potatoes in a bowl and add the rest of the ingredients. Toss with your hands. Pour potatoes onto prepared pan and bake in the oven for 25 to 30 minutes until they are fluffy on the inside and crisp on the outside.
