Description

This recipe is great for a large group (or if you are a fan of leftovers) or you can halve the ingredients for a smaller group. Don’t halve the stuffing portion, however.

Ingredients

  • 5 pounds Yellow Squash, Sliced 1/4" Thick
  • 1 whole Large Onion, Chopped
  • 1 cup Carrots, Peeled
  • 1 can (10 3/4 Oz. Can) Cream Of Chicken Soup, Condensed
  • 1 cup Sour Cream
  • ½ cups Flour
  • 1 package (6 Oz. Package) Stuffing Mix, Seasoned
  • ½ cups Margarine, Melted

Preparation

1. Combine all ingredients except stuffing mix and margarine.
2. Place in a crockpot.
3. Mix together stuffing mix and margarine.
4. Spread on top of the squash mixture.
5. Cover and cook on low for 4-5 hours.

CarolinaHeartStrings, I have been making this for years and it is delicious. I haven’t made it in a while and you have inspired me. It is so convinient because it doesn’t take up space in the oven. I have found over the years that the sweetness of the carrots makes a huge difference in the casserole taste. Mine calls for 1/4 cup flour, 8 oz stuffing, and cook for 7 to 9 hours. I hope readers try it.
