Description

A crispy, healthy sweet potato fries that are baked and not fried!

Ingredients

  • 8 ounces, weight Sweet Potato
  • 1 whole Egg White
  • ¼ teaspoons Cinnamon
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Pepper
  • 1 dash Cayenne Pepper (Optional)

Preparation

Scrub potatoes, pat dry, and cut into sticks. Place potatoes into a cold bowl of water and let them soak for 30 minutes to get the starch out. Rinse and pat the potatoes dry.

Preheat oven to 425ºF. Line a baking sheet with parchment paper spray with cooking spray.

In a medium mixing bowl, whisk the egg white until very light and foamy (a few minutes). Add the potatoes and the seasonings to the egg whites and toss to coat evenly.

Spread the potatoes onto baking sheet, not touching. Bake for 30-40 minutes, or until golden brown and crispy. Halfway through the cooking time, flip the potatoes and rotate the baking sheet. Cook until crispy and serve immediately.

I normally put my baking sheet in the oven while I am preheating it, the fries get crispy on the bottom that way

This was wonderful! I followed the recipe exactly, except I didn’t have any parchment paper so I used foil. My family loved the fries, especially my 7-year-old.

Just made this for my bf for dinner and although they didnt turn out exactly like the picture (I blame my awful oven), they were really good and we both loved them. Its so hard to find new ways to make yummy vegetables, so i will be making these again. Thanks for the recipe!!
