Description

In the mood to grill? Add this crisp, fresh and extremely colorful slaw to accent your favorite grilled dish!

Ingredients

  • FOR THE SLAW:
  • 1 whole Fennel Bulb, Stalks Removed, Cut In Half And Cored, Then Sliced Thin (Fronds Reserved And Chopped)
  • 2 cups Thinly Sliced Red Or Purple Cabbage
  • 3 whole Green Onions, White And Dark Green Parts, Sliced Thin
  • 3 strips Bacon, Cooked And Crumbled

  • FOR THE DRESSING:
  • ¼ cups Mayonnaise
  • 3 Tablespoons Red Wine Vinegar
  • 1 teaspoon Honey, Or More To Taste
  • 3 Tablespoons Reserved Chopped Fennel Fronds
  • Kosher Salt And Black Pepper To Taste

Preparation

Toss the sliced fennel, cabbage, scallions, and bacon together in a medium bowl. Whisk the mayonnaise, vinegar, honey, fennel fronds, and kosher salt and pepper, to taste, in a small bowl. Add the dressing to the slaw and toss to coat. Cover with plastic wrap and let marinate for at least 30 minutes to an hour. Serve chilled!

Delicious! The fennel was a great addition to regular slaw. We made it without the bacon though to make it vegetarian for visiting family. I can’t wait to try it again with the bacon added!
