Description

This is utterly divine and very pretty on the table.

Ingredients

  • 9 slices Bacon, Chopped
  • 2 cups Onions, Chopped
  • 2-½ pounds Butternut Squash (peeled, Seeded, Cut Into 1/3 Inch Pieces)
  • 12 ounces, weight Baby Spinach Leaves
  • 16 ounces, weight Frozen Corn Kernels, Thawed (1 Package)
  • 6 Tablespoons Fresh Basil, Chopped

Preparation

Saute bacon in a large pot over medium heat until crisp, about 10 minutes. Add onions and butternut squash.

Saute until squash is almost tender, about 12 minutes. Add spinach and corn.

Toss until spinach wilts and corn is heated through, about 5 minutes. Stir in basil.

Season with salt and pepper. Transfer to a bowl and serve.

Serves 8-10.

Beyond my wildest dreams for a new winter veggie dish. I firmly believe that almost any recipe is improved by bacon, so I had to try this. We love it. My kids also eat veggies without any trouble, so it was a household favorite in moments!

This is SO incredibly delicious! The whole family absolutely loved it. (granted my kids are considered strange by some because they will go to fisticuffs over who gets the last brussel sprout or asparagus…) I highly recommend this hearty dish!
