Description

Broccoli and okra sauteed in olive oil and butter, along with almonds, garlic, and lemon.

Ingredients

  • 1 bag (small 16 Oz. Bag) Frozen Or Fresh Broccoli
  • 1 cup Sliced Okra (Fresh Or Frozen), Not Breaded
  • 2 Tablespoons Olive Oil
  • 1 clove Garlic
  • 1 pinch Crushed Red Pepper Flakes
  • ¼ cups Raw Sliced Or Slivered Almonds (Chopped Pecans May Be Substituted)
  • 1 Tablespoon Butter
  • 1 whole Lemon, Zested
  • ¼ teaspoons Fresh Lemon Juice
  • Salt And Pepper, To Taste

Preparation

Pour olive oil into a saute pan (twice around the pan is about 2 tablespoons).

Slice one clove of garlic. Add the garlic to the pan with a pinch of crushed red pepper flakes. Add raw slivered almonds. Saute until almonds and garlic are golden brown, being careful not to burn either one. Then add butter and the broccoli. Saute for a few minutes until the broccoli starts to get tender. Then add lemon zest and juice, okra and salt and pepper to taste. (Using lemon pepper is nice in this recipe, or just use plain old black pepper!) Saute for a few more minutes until the veggies are tender to your liking. When the dish is finished, the broccoli will begin to brown slightly. Saute for approximately 10 minutes total cooking time.

Enjoy with your favorite meat dish for a delicious and healthy meal.
