Hericots vert and baby bella mushrooms marinated in balsamic vinegar and olive oil.
Preheat oven to 450ºF. Combine beans, mushrooms, olive oil, balsamic vinegar, and salt and pepper in a gallon Ziploc bag and seal. Massage ingredients and toss so your veggies are completely coated. Allow to marinate until your oven is preheated. You may even want to let them marinate a little longer to absorb the flavors.
Put your veggies on an aluminum foil-lined baking sheet and allow your veggies to roast for about 25 minutes.
Top with freshly grated Parmesan cheese and serve.
