I made this recipe to serve one so it is super easy to adjust to feed however many people you’re cooking for. Or if it’s just you on a Saturday morning and you feel like whipping up a batch, that works too.
I never set out to make corn fritters, but I’m always glad when I make them. They’re delightfully yummy! You can serve these in a big basket as a munchie or appetizer … or make them as an accompaniment to grilled hamburgers or a big shrimp or crab boil. Or, for a really special treat, sprinkle them generously with sifted powdered sugar! You’ll just have to trust me on this.

This is one of the first dishes I ever ate—or I should probably say, experienced—when I moved to Italy as a tweenager, and since then it has been one of my all-time favorites. From that very first taste, Italian food has inspired and intrigued me. I can’t seem to get enough.
